After working for more than 10 years in some of the finest bars and restaurants in the St. Louis area, Derek Gamlin set out to create a more unique drinking establishment.  Derek took the idea to his brother Lucas who had been working in Portland, Oregon, also in the bar industry.  With Derek’s unique idea and Lucas’s west coast influence, the Gamlin brothers opened Sub Zero Vodka Bar in the Central West End in 2004.

The Gamlin’s needed a chef who could take their idea of a vodka haven and translate it into the food. With more than 15 years experience at the Ritz Carlton, sushi chef Vu Hoang was a natural fit for the drinking oasis.  Using fresh fish that's delivered daily, patrons can enjoy the atmosphere and fresh sushi until last call, seven days a week.

A “new” American Burger menu was developed in 2007 to bring greater variety to Sub Zero. Menus include fresh burgers made with high quality, hand-ground American Kobe beef, Black Angus beef, lamb, or bison. The menu also offers vegetarian options such as the ratatouille burger. Burger lovers can choose from a variety of our signature burgers or create their own by choosing from dozens of available toppings.

Since 2004, Sub Zero Vodka Bar (NOT a martini bar) has developed the most extensive drink list in the St. Louis area.  Known for its famous “ice bar,” Sub Zero has become a hot spot for some of Hollywood’s greatest celebrities including Dan Akroyd, George Clooney and Sammy Haggar. The award winning and nationally recognized  establishment  has been named St. Louis Magazine’s “A-List Best Burger” and “A-List Best Bar.”

While “copy-cat” establishments have popped up in the St. Louis area, only Sub Zero Vodka Bar can claim the LARGEST SELECTION OF VODKA IN THE COUNTRY.
