Derek Gamlin had more than 10 years experience working in St. Louis’ finest bars and restaurants, but envisioned owning a drinking establishment unlike any other in town. Derek convinced his brother, Lucas—who worked in the Portland, Oregon, bar scene — to join him in this exciting new venture. Combining Derek’s bold idea with Lucas’s west coast genius, the Gamlin brothers opened Sub Zero Vodka Bar in the Central West End in 2004.

Of course, a chef was needed who could enhance the Gamlin’s vodka haven experience with amazing and flavorful food. They found that talent in Sushi Chef Vu Hoang, who had more than 15 years experience with the Ritz Carlton. Featuring a variety of fish delivered daily, fresh sushi is available until last call, seven days a week.

Adding variety, a modern American Burger menu was added in 2007. Selections include fresh burgers made with high quality, hand-ground American Kobe beef, Black Angus beef, lamb, and bison.
